stETH is not hard pegged to ETH since withdrawals are not yet enabled on the beacon chain. Swapping through a DEX allows users to essentially unstake right now, or they can wait until withdrawals are enabled at which point they would be able to redeem stETH for ETH through Lido at a 1:1 rate.

It's not just through Lido. Actual unstaking is not yet enabled on the beacon chain. Validators cannot unstake until that happens, which will be in the next Ethereum upgrade, expected sometime in 2023.
