Simply because it's not been implemented. I don't know if Telegram officials have shared their specific reasoning for it, but it is what it is.

Is there any way to accept payment in telegram channel using Google Pay?

I don't have any experience with Google Pay's APIs, but I'm certain you could develop a bot that processes payments through it, though it naturally won't be as seamless as Telegram's built in payment system. With web app bots you can probably get pretty darn close, though.

Yeah I'm not sure. Odd. They clearly say that it supports GPay, but I don't see it in Botfather either. Maybe they've revoked support. Perhaps someone more knowledgeable on the subject can chime in but I don't know, myself. Sorry!
