You need a database or some sort of storage where you store the user's state in. Then you can add a command like /trial and store that the user just started a trial period. Then you periodically check for users who exceeded the trial period and terminate the premium features.

Just stop the bot application when you want it to stop. Or check if a certain date has surpassed and then don't reply to messages anymore. If you are a developer, that shouldn't be an issue for you.
