The simplest way of doing that is to assign hotkeys to the different materials. For example, you might choose 1, 2 and 3 on the keyboard. To assign a hotkey: Click on the large material thumbnail in the Material palette so that the pop-up appears with all the materials. Ctrl+click on the material you want. Press the hotkey you want to use. Repeat (2) and (3) for the other materials. Store the hotkeys before closing ZBrush (press Preferences>Hotkeys>Store).
