I get the staking rewards on steth? Say I hold steth and use it as collateral for borrowing on aave. Where do my rewards for steth itself occur?

You can see the rewards on the withdraw page on curve. If you don't see them you either haven't earned any yet or didn't actually deposit the lp

rewards are added to your collateral. When you withdraw steth you will get your rewards
