You can run it on bare metal but update the ports. Or you can use virtualization to separate each chain. But it will have to be really powerful machine. You are best running each node on a separate machine. Else managing will become a nightmare. Also, if something goes wrong then all the nodes will go down.

My question though was more to understand what interchain security has brought if validators still have to install more infrastructure and resources and choose to validate the new consumer chain? Is it that the new consumer chain is secured by the market cap of ATOM, not the market cap of the new token?

Consumer chain will be secured by amounts of total staked Atoms which is almost %69 of Atom supply. So consumer chains will be secured as Cosmos Hub blockchain. Interchain security is not just about validators. Yes, Validators will need to run a new node but i did explain that Interchain Security allows new blockchains to get Security and makes new blockchains to onboard to Cosmos ecosystem. You have so many steps if you want to build L1 Cosmos app-chain and this costs a lot of money and time for you. Meanwhile, leasing security from Cosmos Hub helps you to launch your chain easier and faster. You dont need to worry about many steps before launching your chain if you choose to build your chain with Interchain Security.

I understand that it requires approval of the ATOM validator community though. This is a big difference from L2s on ethereum.

All Cosmos Hub validators should validate on consumer chains. But the lower 5% of voting power has the ability to “soft-opt out” which means that they don’t need to run nodes because it will be costly for them.So there will be some validators that they will not validate on consumer chains. Expanding validator set is always possible via governance proposal. But while some small validators prefer soft-opt-out , expanding validator set might be not a good choice for the short-term.
