And I see as for the latest Bitcoin blocks 818

240, 818 241 and 818 242 are market to be mined by AntPool — the three subsequent blocks, do you get it? and such three- and many -block chain advances are not rare in Bitcoin chain

while having 51% gives you the chance to add at most two subsequent blocks

more over, the "hash rate" is another myth, it is artificially calculated by some formula from the times between blocks and their hashes— nothing can compute “the real sum of all hashes per microsecond“

as the third, hash code generation is gambling, it may be called "work" only if you call autospin slots playing as “work”— so there's a chance to stack two subsequentials with say only 1/100 of all the theoretical "hash power" if you’re lucky, and at the same time, 51% doesn't guarantee you will

there are non-mining nodes as well, in Bitcoin the most of nodes don't try any block generation, they count as "zero hash rate" but at the same time they don’t accept blocks which violate the rules e.g. spending already spent

as for "forgetting" some tx in a block, it isn't possible without upgrading nodes to ignore the existence of that block or something like
