You get vBNT for the BNT you staked. Generally, To unstake from v2.1, you should just need to return vBNT in order to get back BNT.

You can either trade it on Bancor 2.1, Carbon or if you have BNT staked in B3.- you can withdraw it

oh cool, earned a nice amount of BNT, maybe i'll keep vBNT it there on V2 COT/BNT do V2 pools still work? I remember I was supposed to upgrade to V3 but didn't I should refresh on what V3 & Carbon benefits would be for me to upgrade

None of the v2 or v3 pools (except maybe stuff like ACRE that started post-deficit) earn LPs any fees anymore, so if you're in a position where your funds aren't in deficit, there's no benefit towards you remaining staked. v2 and v3 are being sunsetted, no further developments or upgrades planned.
