When people sell services on monero marketplace, is it customary

to sell at a discount, "spot" or a premium because you aren't just paying for the item/service but for the added privacy?

It can be cheaper for common objects and services because there is less tax. and the private side is inherent to monero, the seller does not have to pay anything extra for that. if it is more expensive, it is perhaps that the seller sells an object or service which plays with the limits of the laws 😁 (which it is compulsory to buy with fiat currency) as on darknet markets

Since both parties to a trade are getting benefit of privacy, why would one get the benefit of the other paying a premium?

It is not uncommon for some items purchased privately(which is legal in my jurisdiction) to be priced slightly higher since you don't have to "kyc" for them.
