That’s generally how bridges work but IBC does more than just token exchanges, it is not an atomic-swap protocol: arbitrary cross-chain data transfer and computation is supported.

Mmm the easiest way to describe it is to compare it to TCP/IP Cosmos works in much the same way, connecting blockchains like the internet connects the server that host websites. And IBC works like TCP/IP, making sure that messages are being delivered with a system of relayers that exchange packets of information that hold the state of the blockchain
Basically each chain sort of carries a small file or “header” that carries a small list of information from each chain performing a transaction between the relayers, it does sort of mint an imaginary token but it’s a packet of information that is kept on the other blockchain
