BUSD and USDx are pegged 1 to 1, right?

ie one share of BUSD is one share of USDX regardless of the underlying price..... is this correct or an incorrect understanding?

This is correct when minting USDX with BUSD-A (note the A!). Minting has hard peg 1:1, so it is definitely based on my experience the best way to protect yourself against USDX volatility.
