If I have a Trezor Model One that has a

24 word seed phrase AND a passphrase am I tied to that hardware? I have all that info backed up but if I lose that device would I have to get a new Trezor model 1 to be able to access the wallet that was on the original?

Yes you would import your seed phrase you can receive all day without hw wallett just can't send

Any BIP39 Compatible HW will accept the seed words - any Trezor or Ledger Model ... there are others too, but those are best for Hexicans.

BIP39 passphrase is part of the spec, so if it's compatible, it's compatible.

No your Crypto is tied to your seed phrase. Since you used a passphrase, it acts as a '25 word' in your case. To recover the wallet on another device you would need the seed phrase + the passphrase for that wallet.
