I notice whenever we talk about the fork/snapshot it’s always

said that we’ll get a copy of all the erc-20s in our metamask. It’s actually a copy of all erc-20s whether they’re in metamask or a hard wallet such as a Trezor, correct?

Non custodial for example would be an exchange…it needs to be in a wallet where the keys are in our control (like a Metamask, Trezor or Ledger), correct?

Any Ethereum network asset that you own. Ownership is key here. You can't have any crypto in a wallet. Wallets can only hold keys.

I understand wallets only hold keys. What I’m asking is if the keys to my erc-20s are on my Trezor, will I receive a copy of those? (I ask this because every time someone references tokens being copied over for this fork, they usually say that the tokens must be in their metamask.)

It's very simple really: - networks don't have a clue where you hold your keys - forks start by copying blockchain databases As you see, wallets have nothing to do whatsoever. Whether you hold your keys in a paper wallet, or on a device, that has nothing to do with the fork.
