USDC has the most liquidity
What difference does that make? Gemini was recommended to me as a CEX, so I'd rather use GUSD, would that be a major drawback? It's also an erc-20, but just curious if there would be any hiccups using it for either on or off ramping via uni.

The general smart/happy path is to only use a CEX for on-ramp/off-ramp for fiat. Then swap that USDC or ETH for HEX on DEx. Since the thickest liquidity is HEX/USDC the price will move less there for you
HEX's price went up the fastest when its liquidity was the lowest. Bitcoin's price went up the fastest when its liquidity was lowest. Ethereum's price went up the fastest when its liquidity was the lowest.

Sounds like it makes more sense if you go with gusd then, because they advertise it as having no fees to or from fiat

but it depends how much it costs to transfer it from wallet to wallet in gwei vs. how much it would cost to transfer wallet to wallet your usdc
