Although I'd ask myself why would someone choose to hold FRAX/FPI vs USDC as a means of transaction? - Maybe holding FPI allows you to passively hedge against inflation? Although I doubt the normal man on the street is that concerned with low single digit percentages vs the effort of using crypto - Maybe transacting with FRAX gives you some sort of cashback (thats going down the route of merchant cards) Just thinking outloud here

Well FRAX and FPI are two entirely different assets and FPI should not be thought of as simply an inflation resistant dollar. I agree about FRAX. It goes to be seen why any stablecoin, including DAI etc, would be preferred over just USDC absent regulatory restrictions.

Yes, or just FRAX/FPI since they are stablecoins and easier for payments of fees/costs. The net effect is the same since the fee revenue would go to FXS. There's multiple ways to design it and still ongoing research phase for the Frax rollup. The profit from the rollup would be calculated as the net revenue from fees minus the cost of pushing state to ETH L1 for security (costs ETH for that). All other revenue other than sequencer/validator costs would be pure profit.
