As more and more people continue to stake onto the network the inflation rate decreases and so does the APY. I did suggest you go through our tokenomics over here to have a much better understanding.

Makes a lot of sense. Basically it is the equivalent of the difficulty for the proof of work (for example, the more miners, the harder to mine a BTC), but here for proof of stake.
