Sometimes it takes a second to show on oklink. I unstaked/restaked hex earlier today on ethf and it didn't show up on oklink for a little while, checked ethf's explorer and it was there

Impossible to know. I'm personally very bullish on hex on the forked chains. Figure hex is hex, smart contract is the same and these low gas cost chains make it less expensive to stake/unstake than it costs in eth main net

Yes. They're both on chainlist and their rpcs are publicly available on their official twitters. There used to be a prompt in here with all the info, but the admins are updating it. Up to you if you'd rather wait for the update or look elsewhere, not sure if I can post all the info here
