You CANNOT CHANGE the default Ethereum Network setting. You need to ADD A CUSTOM NETWORK. Here are instructions for adding custom networks in Metamask: https://metamask.zendesk.com/hc/en-us/articles/360043227612-How-to-add-a-custom-network-RPC And here are some alternative providers to try: https://ethereumnodes.com/ Always DYOR / DD. All nodes will collect your IP address etc in order to work - what matters is who they share that data with.

You still get tracked even after changing you IP, there are many informations indicators that might still get leaked but in the case of the infura that might or might not be enough.
