Yes, you have to manually claim most airdrops. Each one is different and info/instructions are released at various times by the various projects. Continually checking back here for info is a good bet, or definitely on each project's website, Medium and Twitter.

You can redelegate your tokens without unbonding, depending on where you currently have them staked. Yes, using 2 or 3 validators to hedge risk is wise. We vouch for the team at Smartnodes. They run a great shop too. Worst case scenario would be the staking smart contract getting hacked and everyone losing their tokens.
