Its plural is just also "Bitcoin Cash" 🤷‍♂

The plural is bitcoins (lower case) or bitcoins cash. But it is also common usage to omit the 's'.

there's a lot of very specific grammar rules that are just not taught in schools, plus language evolves over time. most people won't care if you don't say "bitcoins cash"

I think leaving the 's' off is fine, but if you are going to add 's' why follow the rules of French
