Trying to get my head around liquidity pooling. So if

I put my orn into the orn/usdt pool, I split my orn bag in half (to USD) then provide liquidity

So say I had 1000 orn, I split it to 500 orn and the equivalent in USDT, if weeks or months later orn goes up in price against the dollar, do I still hold the 500 orn that's in the pool?

yep - let me give you a formula

Liquidity pool stakers are exposed to impermanent loss. You can read more here - https://academy.binance.com/en/articles/impermanent-loss-explained

that's how you can calculate you orn and usd at different prices

You'll need to take impermanent loss into account. If ORN would suddenly rise a lot in price, you could end up with more USD then ORN when withdrawing from liquidity pool. Be very careful with that and examine the risks carefully before going into a liquidity pool. I think there are some online calculators where you can enter your entry price and then see what loss you have when withdrawing at certain price levels
