Same reason why it took time for L2 scaling solutions to gain significant traction: it takes time and communities need to vote for it (in many cases). Would you deploy your bluechip on another network just like that? There's serious decision-making involved next to "more efficiency".

Furthermore, people don't just follow a project to any chain. People generally tend to stick to "what they know". Change is nothing our very nature appreciates a lot. And business decisions take time, even in fast paced crypto.
