I am trying to wrap my head around how and why the ATOM will accrue value (from interchain security) once Celestia launches.

Thanks for the link! What does "running settlement chains for rollups using the Hub's interchain security" entail?
At its core, a settlement layer is essentially an execution chain that is connected to a rollup with a trust-minimized bridge. This allows the settlement layer to act as a hub for rollups to bridge tokens and liquidity between other rollups that share the same settlement layer. Cosmos hub can leverage Interchain security to bootstrap multiple execution chains...
Am I wrong to think that this is a more niche usecase? And that most new projects will simply turn into rollups that will leverage Celestia instead?
I think you're wrong, especially since you're probably underestimating the growth of Cosmos ecosystem in the coming years. Also like I said earlier, ATOM usecases go far beyond just Cosmos hub. ATOM can be used on any Cosmos chain for various usecases, including gas. Interchain accounts are a huge unexplored utility as well. Cosmos hub will also be used as a liquid staking layer and an IBC router for example. Options are limitless tbh
Ah sorry, i should have specified that i meant from the shared security point of view. From that point of view, besides the usecase you outlined above, when do you think it will make sense for projects to leverage the hubs security vs going the Celestia path?
Impossible to tell since the ICS is basically ready while Celestia is probably still a year away from launching. IMO ICS will be a huge success
But from a theoratical point of view, assuming they both launch just as expected, you see any key advantages
