I think the only way would be to run your own non broadcast mempool of exclusively your own TXs and hold it until you find a block and then fill it with only your own TXs foregoing all the TX income.

is that not how it works? You crack the hash and then put the TXs in the block. That is why someone on BCH was mining empty blocks for so long they DGAF about what TXs went in so didnt even bother.

Ok so then you build the block with all your own TXs (but dont broadcast them to other pools) and when you finally crack a hash your own TX block is ready to go

Exactly, but they could also use public TXes and claim those fees so long as the TXes match the pattern they want.
