Correct me if I'm wrong but with Constellation, there isn't

a real need for protocols and oracles?

They their own on chain oracles for verifying data at the source. I guess on occasion someone may want to use an outside oracle service (can’t think of why right now...). Native chains and other protocols can plug into the Hypergraph as well.

Outside oracle services usually go back to some centralized data source to bring the information onto the blockchain. Imo
