nodes can be centralised or distributed or decentralised. And it is on the state channel who takes the decision on how they want their state channels to be (I guess in agreement with the node operator If it is not the state channel owner itself).
A State channel may go for distributed node architecture, so they “whitelist” only some nodes and all their data is validated by these nodes.
My question is: this “whitelisted” nodes will be use exclusively by this state channel? Or any node will always serve the whole network even if they are selected by a state channel to process their validations?

It depends - for example hybrid nodes validate for state channel and the whole network! :) You also can have the case where your node only validates for one state channel.
