take one single dataset split it from the others (say messaging) and put that task specifically on a group (cluster?) of nodes (servers?) solely purposed for this task that it is a form of sharding? Just trying to get a better understanding on what function "multiple node types" fulfill or actually means.

Multiple node types, from my understanding, means that you will have the option to run a full node with all legacy data, dating back to block 0, as well as a node that only has the x latest transactions
