Cosmos and Elrond are different architectures as you said. Elrond uses shards, which are identical blockchains that run in parallel and are coordinated by a main chain (in our case is the meta chain). Cosmos uses appchains, which are blockchains built specifically for a usecase, with the same base/foundation (the Cosmos SDK) but with their own tokens and a slightly modified architecture, that are connected to one another through the IBC protocol, which is the sole usecase of the Cosmos blockchain. As such interoperability in Cosmos happens by having the same base (imagine here similar how you can easily integrate EVM chains with Ethereum and one another) for each appchain so that they can plug into the IBC and communicate through the Cosmos Blockchain. Now you can't optimize data transfer between appchains as while the have the same base, they have different architectures. So in this regard Elrond will be much faster and will be able to offer superior communication/interoperability between it's shards, as that is the main goal of our network. Thus we have greater speeds, lower fees and all that, but with Cosmos you can spin your own blockchain tailored to your usecase (good luck finding the validators to run your chain though). So to put it shortly, Cosmos is made for people who like custom solutions, but don't need to optimize for speed and decentralization. While Elrond is suited for more general/wide range of applications, with superior scaling, speed and decentralization. Ah and as a security note, in Cosmos security isn't shared, which means it is not mandatory to connect to the Cosmos blockchain to communicate with other chains, you can bypass the Cosmos blockchain entirely and connect through another chain. That chain in turn can connect to the Cosmos blockchain, but here comes the fun part, if the first chain is hacked/validators turn rogue, all the value that passed through the whole Cosmos ecosystem by using the second chain that connected to the Cosmos blockchain and corrupt the whole ecosystem.
