there any inherent risk to it (like staking provider fcking up)? Is there any benefit in diversifying the EGLD over several staking providers?

Every provider uses an instance smart contract from the Delegation Manager System Smart Contract written in the Elrond protocol, fully audited by Elrond team and independent audits. So your funds are always safe, the only risk is to not getting rewards for various motives like 0 nodes eligible, offline nodes, jailed nodes
