So in theory the community could create another website and access the smart contracts independently of the Elrond development team? My only concern is that clearly the dev team have edit access to to the smart contacts, so under duress the DEX could be shut down? Fundamentally is that correct?

Well they are being maintained, someone has to do that unless you never actually make any updates and they are left as is

Hopefully once all the bugs are ironed out the smart contract keys are destroyed so noone can shut them down. That is what I'd want to see from the Maiar DEX eventually.

That would mean there would never be any updates, seems rather short sighted in what is a fast moving and constantly developing space. Of course if it's a basic function that's perfectly acceptable, but when there are so many moving parts it's just not feasible. Keep in mind that anyone can build their own DEX with smart contracts, but if you were never going to update and innovate it would have a very basic functionality

That would mean there would never be any updates, ...

Granted there are limitations but for those seemingly simple functions, once they have been battle tested and mature like say the SWAP function that could be a candidate for no admin intervention like uniswap for example. Anyway we have a long way to go until that possibility is on the table so for now we let the dev team innovate and refine. Peace bro.
