If I increase my collateral on the short position, does

the unlock period of UST reset? (because the other day I shorted a masset and was waiting to claim 1000UST on 14 March. Then on 10 March I shorted 500UST more of the same mAsset and the whole amount of 1500UST can be unlocked on the 24th March instead of 1000 separtely form the 500).

If you add more mAsset to the existing position, then it will reset your UST claim period. But if you open a separate position then you can claim UST separately for both positions on different dates.
