Genuine question. I mean does a public node system add

ability to make the actions happen, or does additional nodes just mean more decentralisation? If the protocol is audited and legit then does it matter because consensus is done by the blockchain used? I’m interested. If alliance block can handle the throughput/use with their nodes, what does additional nodes add? Service or decentralisation? Is decentralisation even a consideration if the consensus is run through a public blockchain?

The consenses onchain (of the network) is that the data that is submitted on the chain is indeed that data, not just that block, but also 1000s of blocks from now (immutability) and to protect the basics of the network, like how much of which assets an address posseses. BEFORE that data goes onchain, we sometimes need a validation step to make sure that this data is correct according to some agreed upon business rules. Blockchain networks are agnostic to any of these business rules (fortunately, it doesn't care, which brings all the many dApp opportunities and innovations). So we need a network of nodes that understand this business logic to validate (and reach consensus on) the data before it goes onchain.
