So as we learned now we should keep our coins

on a cold wallet.
Any ledger experts for the followong question?

Ledger always changes the receiving adress for btc everytime you received coins.
I‘ve found out that you can still use the old adress which you already received once.
How does it work for sending out btc? Can I choose the adress from which I wanna send out (which should be one of the former receiving adresses)
I don‘t talk about different accounts. It‘s the same account
