it depends a lot on the scale and the environment of the production. Some use massive VM farms that generate VMs from a seed on a shared server, some use containers (kubernetes, dockers...) and, on smaller scale stuff, they just shut the server down and update. Some special cases like stockexchanges also have closed time when they can "leisurely" update
