Hm... so if companies could just compile their codebase with

the new version, why do they choose not to? Is it to enforce coding standards, e.g. not wanting to have vars popping up randomly in newer code?

Training developers is costly business 😑. If everything is working fine and you don't see any substantial profits from switching to new technology then they don't bother
