As far as I know, the only issue with customization is you can't move it to the sides or the top of the screen. Also, what issue with choosing your default browser are you talking about?

"Basically, this means that “microsoft-edge:// links” can no longer be forced to open in your default browser of choice." Why would you expect a link formatted like that to open in a browser other than Edge?
