How much space should be give to the root partition?

I see that the default settings sometimes runs out of space quickly. And some of my VM's even had issues with boot partition being too small.

1gb boot, 100m esp, rest of the disk is root

I probably don't. Is it only really advantages to have it separate if you want to change the distro without removing your files?

or reinstall your current one, but you can always back your files up first.

You should consider if you really need to split /home and / in the first place.
