have a little exprience with ubuntu and fedora but they easily crashed and my problem was I couldn't restore them and ...
Do you know a secure distro wich its updates are very safe. Is centos that is I' looking for ?
Secure or stable, but I suspect neither will help you
NixOS
you want a secure system? so make it simple and lightweight (don't have what you don't need), stick to latest lts and compatible versions and read source codes patch ugly stuffs, control dangerous interfaces and mitigations, control all configs and abilities, blah blah blah which you can't do some parts in an extreamly modular fullfilled binary distro, you can just trust. also control your hardware, firmwares etc oh wait you can't do that? yeah right, just trust and don't waste your time
All linux versions are secure provided you keep them up to date. Stable-fixed versions like cent os are suitable for server not everyday use
