my emails when I can (because why not), but the whole idea of "plausible deniability" on emails that aren't signed.. how's that going to hold up in court, when your mail server is still the one that sent it? For spam, that's an easy case with an RBL provider and/or your hosting provider. But for incriminating emails that you (yes, you!) want to personally deny having sent.. I don't think that a court is going to consider cryptography in the same regard as we do.
Do courts consider screenshots? I think they do... That would be a bigger issues.
