You might want to disable some systemd services and remove some packages. Fedora Workstation is extremely bloated.
Fedora Workstation comes with -all- gnome services and optionals default so you never run into a non-working gnome feature. For those that prefer minimal with less options there's fedora everything and manually installing -just- gnome-shell and gdm.

DE features are not really the problem. Fedora Workstation doesn't ask you what you need. It installs everything remotely useful for development even though most people will never need ALL of it. The result is increased boot time and slower desktop on old machines.
If you have an old and slow machine you can install Fedora Everything.
