and have ~3-400 tabs open at a time. Is it normal for tabs to lag so much that even typing experience degrades and adds ~500ms-1s latency?
Most of these tabs are years old and almost definitely not in the memory now when I started the ff instance. Currently, I only have about ~30--40 tabs loaded.

It happened to me having low performance when the tabs grown over 100 tabs But I somehow lost all of them multiple times so often I move all of them to bookmarks, I close all of them and reload from the new window
is bookmarks sorted by date by default on firefox ?? it is not on chrome and this doesn't make sense for me especially when there is no option to order bookmarks on the bookmark tab i think it will be present somewhere

The tabs are not ordered by name or by date They are saved in the same order for the tabs
Bookmarks are in the same order as you added them unless you manually changed their order. If you add multiple at a time, then what Muflone said applies.
A browser window with a single tab takes about half a gig of RAM, so if you want to have a massive amount of tabs opens you have to buy a laptop with at least 128 GB of RAM
