If it has the pins for it, sure why not? If memory serves me right, STM32 chips are basic ARM processors. They can be programmed to do a lot of things. DPS5005, 3005, ... CV/CC power supply modules use them too, and they can be reprogrammed with OpenDPS.

Fair enough yeah, the gate of a MOSFET wants a lot of current as fast as possible to charge itself up. An optocoupler could mitigate that and voltage differences, or one could even opt for a dedicated MOSFET driver circuit.
