you have to oversize your onprem to face a forecasted amount of traffic: if this forecast is wrong, you either end up with unused capacity or deal with an insufficient amount. When it comes to do the update of the vm, in cloud you do build once deploy many: you create an image with packer, and you send it as rolling update to all the machines, and this will take care of rolling out the os with 0 downtime and or maintenance. Let's say I have 500 machines service as webserver: you send it once, and it's done. If the update is unhealthy, then it will roll them back to the previous configuration. Again, 0 downtime. On prem it's a nightmare
Unless you build a cloud-like infra onprem
that will still be limited by your hardwares capabilitites
